a healthy cookie recipe (seriously!)
I'm so excited to share this recipe with you - especially for anyone dealing with a food allergy or a resolution to eat a more healthful diet!
Here are the ingredients to make 2 dozen cookies:
3 ripe bananas
1 cup unsweetened applesauce
1 tsp cinnamon
3 1/2 cups oats
1 cup raisins
1/4 cup pumpkin seeds
*You can substitute dried cranberries or another dried fruit for raisins if you like. You can also substitute your favorite seed or nut for the pumpkin seeds if you prefer.
Preheat your oven to 350F (180C). Lightly grease a cookie sheet with canola oil (or your favorite baking oil).
In a large mixing bow, mash the bananas until they are fairly smooth. Next, stir in the applesauce and cinnamon so that they are well incorporated. Then, add the oats and mix well. Last, add the raisins and pumpkin seeds and stir until they are evenly distributed in the mixture.
Use a tablespoon to drop spoonfuls of the cookie mixture onto the cookie sheet and bake for 15 minutes. In my oven the cookies are *perfect* after 15 minutes of baking, but you oven may be a little different - check them at 15 minutes and add a couple of extra minutes if needed.

these look WONDERFUL!! can i assume you use a gluten free oatmeal? there are so many children with food allergies at my preschool that this looks like a wonderful treat to give them on occasion. thannks for sharing.

Oh, yes! If you are celiac you should use certified gluten-free oats. I have a wheat intolerance, but the small amount of contamination in commercial oats doesn't bother me... make the call depending on your particular situation!

I haven't tried any specific substitutions for applesauce, but I bet you could just add 1 more cup of banana or even a cup of canned pumpkin (pumpkin is really good for you!) - anything with a moist, applesaucy texture.
I Just made these....they are amazing. Mine were perfect after about 20mins in the oven. You can prob sub any fruit puree that gives you a similar consistency to the apple sauce. I made a cake similar to this but you powder the oats for a more cake like look :). Great recipe
I often use pureed prunes as a substitute for butter in cookie recipes, so you could replace the applesauce with it in this recipe. I put them in a pot with just enough water to cover them, simmer for about 10 minutes, let them cool, then puree in the blender. It keeps FOREVER in the fridge. I've also found that the sweetness of the prunes allows you to reduce the sugar in the recipe. The thickness of the puree makes a very chewy cookie.
