a weekend of food posts :: applesauce cake recipe

I started making this Applesauce Cake a few weeks ago and I'm addicted to its simple sweetness! It's sort of my Everyday Cake's delicious twin! This cake is easy to make, requires just a few common ingredients, and the unsweetened applesauce & whole wheat flour give it a healthy spin.

This time I carefully sliced my cake in half and filled the middle with homemade strawberry preserves... a few leftover preserves went on top....



Here are the ingredients:
2 cups whole wheat flour
3/4 cup sugar
1/2 tsp salt
1 1/2 tsp baking soda
1 tsp cinnamon
1/3 cup canola oil
1 1/2 cups unsweetened applesauce

Preheat your oven to 350F. Mix the dry ingredients in a large mixing bowl, then create a well in the center and add the oil & applesauce. Stir everything until it's well mixed. Pour the mixture into a lightly oiled cake pan. Bake for 45 minutes (or until a knife inserted in the center comes out clean). Let the cake cool before trying to remove it from the pan.
